Our broth is the foundation of everything we do. Simmered for over 12 hours, we extract every ounce of rich, complex flavour from carefully selected bones and aromatics. The result is a deeply satisfying broth that forms the soul of each bowl we serve.
Ramen, originally a Chinese noodle dish, was introduced to Japan in the late 19th century, where it was refined into a dish of extraordinary depth. We honour this history in every detail — from our house-made tare to our carefully chosen toppings, each bowl is a love letter to Japan's noodle culture.
